Ingredients

  • 150 g frozen blueberries
  • 1 tablespoon maple syrup
  • 2 tablespoons water

Instructions

  • Add the frozen blueberries, maple syrup and water to a small saucepan.
  • Place over a medium-low heat and gently bring to a simmer.
  • Cook for 5-10 minutes, stirring occasionally, until the blueberries have softened and released their juices.
  • Gently crush some of the blueberries with the back of a spoon, leaving some whole for texture.
  • Remove from the heat once the compote has thickened to your preferred consistency. It will thicken a little more as it cools.
  • Serve warm or allow to cool completely before transferring to an airtight container and storing in the fridge.

Notes

Recipe notes

Frozen blueberries can go straight into the saucepan, there's no need to defrost them first.
For a smoother compote, crush more of the berries as they cook. For a chunkier texture, leave more of them whole.
Store in an airtight container in the fridge for up to 4 days. I like to make a batch ahead and use it throughout the week on chia pudding, yoghurt, porridge or quinoa porridge.
